by Ric Rhinehart / 2019 Re:Co Symposium

Specialty coffee may be defined as coffee, from a known geographic origin, that has a value premium above commercial grade coffee due to its high quality in the cup and to attributes that it possesses. We can think of specialty coffee, whether bean or beverage, as being defined as differentiated coffee products that garner a premium to commodity coffee products in the same markets.

We are also compelled to consider the sustainability of the product when defining specialty coffee. That is, even if a coffee results in a great tasting beverage, if it does so at the cost of the dignity, value, or well-being of the people and land involved, it cannot truly be a specialty coffee.
